Metodologie chimiche ed analisi dei prodotti alimentari

Lo studio dell'evoluzione chimica degli alimenti è basato sulla comprensione delle reazioni chimiche e biochimiche che avvengono durante la produzione delle materie prime, nei processi di trasformazione e durante la conservazione.Le analisi degli alimenti concorrono a fornire le informazioni necessarie all'innovazione delle tecnologie alimentari. Inoltre, il progresso della produzione primaria, sia vegetale che animale, crea nuovi e più complessi problemi sia di natura tecnica che legale.
Alcuni argomenti emergenti nel campo degli alimenti, come ad esempio i cibi funzionali o alcuni problemi di rischio chimico (erbicidi, insetticidi, antibiotici o ormoni) richiedono uno sforzo costante per sviluppare metodi analitici innovativi basati sia su strumentazione da laboratorio sia su metodiche di screening da campo come i saggi biologici o i biosensori.

L'attività di ricerca dell'Unità diMetodologie Chimiche ed Analisi dei Prodotti Alimentari si articola due Laboratori; il Laboratorio di Chimica Organica ed Inorganica ed il Laboratorio di Chimica Analitica. In questi Laboratori grazie ad un ampio spettro di competenze, diverse ma complementari e coordinate, è possibile affrontare con un approccio multilaterale i numerosi e diversi aspetti delle implicazioni della chimica nella scienza degli alimenti.
