PRINCIPALI LINEE DI RICERCA

- Disegno e conduzione di studi di intervento in ambito nutrizionale con umani, sia in cronico che in acuto.

- Valutazione della biodisponibilità dei composti fitochimici, in particolare polifenoli, attraverso l’analisi dei loro metaboliti.

- Caratterizzazione di composti fitochimici, principalmente di natura fenolica, in matrici alimentari di origine vegetale ed estratti vegetali mediante tecniche di middle- e high-pressure liquid chromatography e spettrometria di massa. Particolare esperienza su cereali, bevande quali caffè e tè, ed estratti di piante atte al consumo alimentare.

- Legislazione alimentare, particolarmente etichettatura, claim nutrizionali e salutistici.

- Analisi della nutrition knowledge in diversi sottogruppi di popolazione e valutazione della correlazione con abitudini alimentari e valutazione dello stato di salute.

- Evaluation of the bioavailability of phytochemicals, particularly polyphenols and glucosinolates, and evaluation of ADME of parent compounds and metabolites by means of HPLC-MS/MS technique.

- Food Legislation, health and nutritional claims.

- Analysis of nutrition knowledge in different populations and sub-groups and evaluation of the correlation between food habits and health status.
