Chemical Methodologies and Food Analysis
Coordinator: Dario Compagnone
The study of food chemical evolution is
based on the understanding of the ongoing chemical and biochemical reactions
occurring during raw material production, technological processing and during
storage periods.
Analytical methods give the scientific
basis to innovate food technology and processing. Moreover, as agriculture and
food technology have advanced, analytical and regulatory problems have become
more and more complex. Emerging issues, such as functional foods, new chemical
threads (e.g herbicides, insecticides, antibiotics or hormones) require a
continuous effort to develop innovative analytical methods based either on
laboratory instrumentation or in-field screening methods such as bioassays and
biosensors.

The research activity of the Chemical Methodologies and
Food Analysis Unit is carried out in two
Laboratories; the Organic and Inorganic Chemistry
Laboratory , and the Analytical Chemistry Laboratory . In these two
laboratories, thanks to the very broad spectrum of different expertises
available it is possible to approach in a complementary and coordinate manner
the vaste field and the numerous chemical aspects implied in food science.
